Abstarct: This research was conducted in 2023 with the aim of investigating the foliar spraying of salicylic acid and spermine at 4 times after harvest on the storage characteristics of Golden Delicious apple. The tested fruits were harvested from a commercial orchard of Golden Delicious apples in Bastam Shahroud area, Abr village. All stages of foliar spraying, measurement and evaluation of physicochemical, qualitative and quantitative characteristics of fruits were carried out in Horticulture Science Laboratory of Shahrood University of Technology. The experimental design used was a factorial type in the form of a randomized complete block with three replications. The experimental treatments include the time after harvest at four times (15 October 2023, 14 December 2023, 12 February 2024 and 11 April 2024), spermine foliar spraying at three concentrations (0, 1, and 2 mM) and salicylic acid foliar spraying at three concentrations (0, 1.5 and 2.5 mM). Foliar treatments including different levels of spermine and salicylic acid were applied on the fruits as a spray until the fruits were completely wet. The results showed that with the increase in the time after harvesting, the firmness of fruits and titratable acidity decreased, and the amount of soluble solids, fruit weight loss, and the activity of polyphenol oxidase, superoxide dismutase and peroxidase enzymes increased to a significant level. In this study, the use of 1 and 2 mM spermine increased fruit firmness, superoxide dismutase and peroxidase activity. The amount of soluble solids, the activity of polyphenol oxidase enzyme and the pH of the fruit extract decreased in the fruits sprayed with spermine. The use of salicylic acid increased fruit firmness, titratable acidity, and activity of superoxide dismutase and peroxidase enzymes. The activity of polyphenol oxidase enzyme and Ph of fruit extract showed a significant decrease (P<0.01) with the use of salicylic acid. The combined use of salicylic acid and spermine resulted in the most soluble solids and the highest activity of superoxide dismutase and peroxidase enzymes. The combined use of these two substances in this research also led to the greatest decrease in the pH of the fruit extract and the activity of the polyphenol oxidase enzyme. The panel test indicated that with the increase in the time after harvesting, the appearance of the fruits and their taste showed a significant decrease (P<0.01). The use of salicylic acid and spermine improved the appearance and taste of the fruit in the last two dates. Finally, within the scope of the research, it is possible to recommend the combined use of 2.5 mM salicylic acid and 2 mM spermine to improve the quality characteristics of Golden Delicious apples in storage conditions.
