S43 : Risk assessment of heavy mextals in some agriculture products

Abstarct: Although consumers have lots of information about the benefits of cereals and vegetables in the recent years, however they have not enough information about the risks of some foods and agricultural products. The aims of the present study were to investigate the risks of consumption of some agricultural products around Isfahan through calculation of risk for cancerous as well as non-cancerous diseases due to heavy mextals content. In order to study the risk assessments for heavy mextals, 103 vegetables and agricultural products samples were collected from different area and towns of Isfahan province. The samples were covered some the most important agricultural products in the region such as rice, wheat, onions, leeks, basil, lettuce, carrots, and potatoes. The samples were analyzed for arsenic, cadmium, nickel, zinc and copper concentrations using ICP standard methods. The results showed that the concentration of arsenic was exceeded the standard maximum allowance level suggested by food and agriculture organization (FAO) for rice, wheat and onions. The concentration of lead was also exceeded the standard maximum allowance level suggested by FAO for leeks, basil, lettuce. The results for other mextals showed that their concentrations were at the normal range of world health organization (WHO) allowance levels. Also, the concentrations of cadmium were below the detection limit for ICP in all samples. The results also showed that Target Hazard Quotients (THQ) for children was found to be 1.72 and 1.96 for average and maximum consumption, respectively. The corresponding data for adults were 2.08 and 3.01, respectively. The other results also showed that the concentrations of arsenic were medium level potential cancer risk level for both groups of age. The similar results were also found for lead with acceptable level of cancer risk for both groups of consumers.
