Abstarct: A lot of melon fruit after harvest, unfortunately be wasted due to lack of proper systems transfer, warehousing, packaging and processing. So we can reduce the amount of waste for this product by small processes such as fresh cut packaging. On the other hand Cut fruits and vegetables can reduce the irreversible part of their quality and sensory quality of these products cannot improved during storage. But this quality can be maintained by various methods including the use of edible coatings and modified atmosphere packaging. In this study, the effect of coating treatments contains of Aloe vera in concentrations of 100 and 50 percent and seed mucilage Balangu in concentrations of 50 and 25 percent with three types of packaging film (40 and 20 micrometer polyethylene films and containers PVC) during 12 days of storage at 4 to 5 ° C on postharvest quality of fresh cut Khatooni melon were evaluated. A factorial experiment baxsed on completely randomized design with three replications. Some fruit characteristics include the physical and chemical characteristics, colorimetric parameters, biochemical characteristics and sensory properties were evaluated. Due to poor quality control treatments fresh cut melon cover and packaging in all measured traits, affecting both protection factor in maintaining the quality and packaging of fresh-cut melon was found. Among the coatings treatments, Aloe Vera 100% and then Aloe Vera 50% more successful in maintaining the quality of fresh cut melon. Balangu seed mucilage with a higher concentration (50%) it's been better than lower concentration. Among the films packaging in most of the traits, no significant difference was observed between the films of PE 40 and 20 micrometers. Quality samples in polyethylene films was better than PVC containers.
