S593 : Coating fish oil with zein / basil gum by spray drying method

Abstarct: In this study, the production of fish oil nanocapsules using basil gum seed coat with barberry extract and alpha-tocopherol by spray drying method was investigated. Initially, 4 types of fish oil picking emulsions in water with different stabilizers are as follows: 1- Basil-Zein gum, 2- Basil-Zein gum containing alpha-tocopherol, 3- Basil gum containing Barberry-Zein extract and 4- Basil gum-containing Barberry-Zein extract containing alpha-tocopherol was prepared. Basil gum and zein with a ratio of 1: 1 as wall and also the ratio of wall to core (fish oil) was 2: 1. Particle size analysis of different emulsions showed that the particle size was reduced below 100 nm by ultrasound. Also, D_50 values were highest for emulsion stabilized with basil gum containing barberry-zein extract containing alpha-tocopherol and lowest for emulsion stabilized with basil gum containing barberry-zein extract. Viscosity results for all samples showed pseudoplastic behavior. It was also observed in the frequency test all emulsions had elastic behavior at low frequency and viscous behavior at high frequency. Light microscope images showed spherical particles of different sizes. The color analysis of the emulsions did not show a significant difference. Following the research, the prepared emulsions were dried by nano-spray dryer and turned into powder. Then, redistribution index, morphology of powders, X-ray diffraction analysis, differential scanning calorimetry and color of powders were investigated. The redistribution index for the powder related to basil gam-zein coating was the ability to recover to the primary emulsion and for the other powders it indicated the inability to recover to the primary emulsion. The results of spherical particle morphology with dense structures showed a smooth surface without cracks and in different sizes. X-ray diffraction analysis showed the crystalline nature of all powders and also the highest peak intensity was related to basil gam-zein gum powder containing alpha-tocopherol and basil gum containing barberry-saddle extract containing alpha-tocopherol. Evaluation of oxidative stability of powders showed that the combined addition of alpha-tocopherol and barberry extract to the coating provided the most stability. Regarding the evaluation of the color of the powders, the highest redness was observed for the powder related to basil gum coating containing barberry-zein extract due to the effect of adding barberry extract, and in general, with drying of emulsions, the brightness decreased and the redess and yellowness increased.
