Abstarct: Drying fruits and vegetables has long been considered in order to maintain quality and facilitate storage, as well as increase added value for the benefit of farmers. There are several methods used to dry food products, depending on the type of energy used, such as electricity, gas and solar energy. Among the types of energy sources, solar energy has received more attention than other sources due to its cleanliness and also the high potential of the country in the field of benefiting from this type of energy. Solar dryers are divided into flat plate (FPC), linear parabolic collector (PTC) and vacuum tube collector (ETC) according to the type of solar energy absorption. In terms of type of drying, they are divided into direct, indirect and combined types. Vacuum tube collector has high efficiency in different weather conditions. In this dissertation, a new practical work has been done on vacuum tube dryer, and unlike previous types that indirectly (water heating or storage materials) use solar energy for drying, in this method, the heat absorbed directly by the sun is used to heat The air inside the vacuum tubes and the heated air are directed directly into the dryer tank and used to dry the product. To perform the experiments, first by designing and executing the air cycle, the device was ready to perform the experiments. To evaluate the performance of the device, 4 types of fruits including apples, apricots, peaches and nectarines, as well as peppers, which are mostly cultivated in Shahroud region, were selected for drying. Different experiments with different air velocities as well as without air flow (off fan) and drying in the environment have been performed and compared with each other. The results of these experiments show a 30 to 70% reduction in drying time compared to drying in the environment. Also, the efficiency of the dryer was up to 10% for the products to fill the tank completely.
