S278 : Evaluation of oxidative stability Nano lipid carriers (NLC) containing fish liver oil and tocopherol

Abstarct: Omega-3 fatty acids (ω-3), which is very useful for health are known to be very sensitive to oxidation, which leads to the formation of toxic hydroperoxides, developing off-flavors and short shelf life. In addition, the formation of free radicals (reactive) during the oxidation process increases the risk of cardiovascular disease. One of the most important sources of omega-3 is fish liver oil. Encapsulation of fatty acids ω-3 with the Nanostructured Lipid Carriers )NLC( method, is a significant way to improve the oxidative stability during storage. Another method is the use of antioxidants for increasing oxidative stability. Vitamin E is the body's natural antioxidant that strengthens the immune system and prevents coronary heart disease. In this study, NLC containing fish liver oil prepared using two methods of ultrasound and hot homogenization, and optimal formulation to achieve particle size of about 100 nm by changing the type of fat and oil phases (solid and liquid) and the type and concentration of surfactant was determined. The test for determining particle size, the performance and stability of encapsulation were performed to determine the functional properties. The results showed that, solid lipid, surfactant type, concentration, time and ultrasonic power had significant effect on particle size of NLC. Optimal formulation with the lowest particle size (101 nm with 0/17 size distribution), respectively. Also, oxidative stability of fish liver oil baxsed on 3 case of emulsion, NLC and NLC containing alpha-tocopherol (100ppm) by measuring the peroxide value (PV) and Thiobarbituric acid (TBA) test were evaluated. The results showed that fish liver oil in NLC with the alpha-tocopherol, NLC and emulsion had highest oxidative stability, respectively.
