Abstarct: Gundelia tournefortii L. is a well known plant in mountains of Iran and is found all over the country. Gundelia Stem, which is a rich source of minerals and vitamins C, B and A, is edible and has therapeutic uses in traditional medicine. In the present study the effect of film packaging and chemical treatments in two separate experiments on shelf life and some quantitative and qualitative Characteristics of Gundelia (Gundelia tournefortii) were studied. The first experiment with two factors ascorbic acid levels (0, 1 and 2 Percent) and three types of packaging film with a thickness of 40 micro polyethylene, polyethylene with a thickness of 20 micro and polypropylene Orient with a thickness of 20 micro done. The second experiment consisted of two factors: Calcium chloride levels (0, 1.5 and 3 Percent) and the second factor was similar to the first experiment. attributes measured on days zero, 4, 8, 12, 16 and 20 were storage. Assessment of physicochemical factors, including weight loss, pH, Titrable Acidity, Total Soluble Solid and electrolyte leakage lead treatments, ascorbic acid, 1 Percent, 1.5 Percent calcium chloride and 40 micro polyethylene film to prevent any change in the factors indicated. In this study, the overall quality of the samples decreased with increasing storage time, however, the most effective treatment to preserve the morphological characteristics and the overall quality of vegetables Gundelia, ascorbic acid concentration of 1 Percent and 1.5 Percent is calcium chloride. The most effective cover for maintaining morphological characteristics and marketability, is packed with 40 micro polyethylene. Evaluation of color vegetables artichoke showed that most of the components L *, a *, chroma, browning index and changes in the color and chroma in control samples packaged in 20 polyethylene film and the lowest in the samples treated with ascorbic acid 1 Percent and calcium chloride 1.5 Percent and packed in 40 micro polyethylene film Was obtaine The least amount of microbial population, protein and activity of antioxidant enzymes catalase and peroxidase and polyphenol oxidase in samples treated with 1 Percent ascorbic acid and calcium chloride 1.5 Percent and packed in polyethylene 40, respectively. In general it can be concluded that ascorbic acid levels of 1 Percent, 1.5 Percent calcium chloride and 40 micro polyethylene film were most effective in maintaining the quality and shelf life of vegetables Gundelia.
