These methods are directly used in Reserve/Resource Modeling. I believe most of them are not as powerful as Geostatistics, but I'm persuaded that these knowledges (Signal and Image processing) are very helpful to understand it (Geostatistical modeling) better. FFT, Wavelet , ... are used in Petroleum industry and so you need them if you want have a job in oil and gas industry. Spatial and Frequency domain analysis methods have some similarities, so knowing one provides a better understanding of other domain (e.g as you know many geostatistical simulation methods lies on Spectral Analysis of Covariance function). the main shortage of frequency domain methods is the necessity of "Regular Grid", there are some way to construct it, but I don't know any straightforward method.

Image processing is very interesting when working on MPS methods and also gives you some good idea on digital filtering methods and improves your Mtalab agility.
So to make the long history short, in overall I think these courses are useful. I may suggest "Statistics" and " Data mining" as useful courses in Mining and Petroleum.
